Brown Rice with fenugreek and Mushroom Diabetic

Method

Heat the oil in a pressure cooker, add the green chillies, ginger, garlic, and

onions and sauté on a medium flame for 2 minutes.

Add the fenugreek leaves, mushrooms, tomatoes, brinjals, surti papadi seeds,and

chilli powder, mix well and cook on a medium flame for 1 to 2 minutes, while

stirring occasionally.

Add the brown rice, 2¼ cups of hot water and salt, mix well and pressure cook for

4 whistles.

Allow the steam to escape before opening the lid.

Serve hot garnished with coriander.
